Asparagus and Feta Quiche – perfect for any occasion.

Asparagus and feta tart

Asparagus and feta together are always a winning combination. Asparagus is in season now and is wonderful and sweet. This recipe takes advantage of the tenderness of the new shoots. Combined with wonderful Tasmanian feta from Westhaven Dairy, this quiche is a complete winner.

Quiche is something you can make the day before. So if you’re going to be having a busy day, make ahead and make it easier for yourself. It’s great for picnics and a day at the beach. Friends coming over? Serve it with a fresh green salad, or a crispy, colourful coleslaw.

If you are serving it straight out of the oven, let it rest for about 5 minutes, so that the custard completely sets. Use a really sharp knife to cleanly cut the pastry. You will find the edges are lovely and crunchy, but need a bit of care when serving. And, if you’ve laid the asparagus in a fan shape, it will be easy for you to divide equally between your family or friends! No arguing over who got the ‘good’ end! As my husband says.

The pastry is super easy to make, especially if you have a food processor. It will take you about 30 seconds on pulse action to bring all the ingredients together! And then only about another 2 minutes kneading it on a floured board or marble slab. Don’t stress if you need to do it by hand – it doesn’t take much longer! Wholemeal Olive oil pastry

Asparagus and feta quiche

When asparagus is in season, it's superb in any dish. Paired with the saltiness of feta, it makes for a great filling for this healthy and flavoursome quiche.

Equipment

  • loose bottom flan dish – or individual ones

Ingredients

  • 1 quantity wholemeal olive oil pastry https://harvestkitchen.net.au/wholemeal-pastry-quick-and-easy-to-make/
  • 2 bunches asparagus stalks trimmed off
  • 2 tbsp chopped fresh chives
  • 4 eggs 60g size
  • 3/4 cup cream
  • 120 grams feta
  • 1 tspn smoked paprika optional

Instructions

  • Make wholemeal pastry crust as per recipe https://harvestkitchen.net.au/wholemeal-pastry-quick-and-easy-to-make/

  • Steam asparagus for 2 minutes in microwave then refresh in cold water, and pat dry on kitchen paper.
  • Chop feta into small cubes. Cut 1/3 of ends off asparagus, and scatter into pastry shell along with feta cubes

  • Arrange tops of asparagus spears around in a fan shape. Mix eggs and cream together and pour gently over the top, then sprinkle chives over. Gently press asparagus into the eggs and cream mix.

  • Sprinkle the smoked paprika over the top and bake for 25 minutes

Tips for changing the Asparagus and Feta recipe

Instead of asparagus, you can use left over roast vegetables. Chop them up into even 2cm sizes, and scatter them around with the feta. And if you don’t like feta, then you can get the same kick of saltiness with olives or capers. Do you like seafood? Then use smoked salmon with the asparagus. This is an amazing combination!

And finally, if you are using asparagus that are not fresh for your local area, make sure you chop off or break off the hard ends first. They are really woody and will spoil your final product.
